Debating on if buying a commuter car is the play

Hi, I 26m am a mobile welder and travel all over the west coast but mainly stay between the Bay Area and Reno. I currently drive a 01 f250 v10 gasser as my one and only vehicle (welding rig, grocery getter, everything in between), it’s gets ~7mpg and it feels like it’s a death by a thousand cuts financially when I’m not using the truck to directly make money since I drive ~250 miles a week for things where the truck isn’t required (meetings, just driving to the shop to work, girlfriends house)

Currently I have $26k saved up separate from everything specifically for something “fun” (new dirt bike, tools, or a vacation) but Iv been thinking about just using that money to buy a newer Subaru crosstrek for ~23-26k. Part of me wants to just buy a shit box econobox for 4-7k and drive it until the wheels fall off but part of me wants to have a nice newer car since Iv never had a car that new (always have bought atleast 20 year old trucks that need to be fixed. My main question here is that do you guys think it’s okay and justifiable to spend all of my “spare” money on a car just for mpg?
